Feeding our Future

42.4% of the adult US population is considered obese, costing an estimated $147 billion in health-related problems according to the CDC. One-third of edible produce is typically left unharvested at farms, which contributes to 40% of the food we produce in the US wasted due to spoilage. 56% of US farmers have been unable to find enough laborers to meet demand over the last five years.

These are just a few of the issues with modern food and nutrition in today's society. Do we have a solution?

I collaborated with co-author Dr. Mirei Takashima Claremon to take a holistic look into indoor farming and explore the future of food and nutrition. We seek to expand the conversation to all levels of leadership — government, industry, and community — to accelerate progress towards this highly efficient and controllable means of producing food for a larger population, both locally and globally.
